Also yeah, the bbq breakdown in TX is accurate from WIA20XX. Central Texas, pretty much the Austin area, is not heavy on sauce but all smoke. It’s what most people outside of Texas think of Texas bbq. It’s also mostly beef focused but pork isn’t ignored. East Texas bbq is more in line with the southeast that they focus on pork more.
I think North TX is pretty similar to West TX with that mesquite flavor.
Texas and Louisiana compliment each other. Louisiana has the creole and Cajun spots. Nobody is touching New Orleans and Southern Louisiana in uniqueness. Texas is bbq and Tex mex which has gotten a lot better.
