The restaurant guy stops them and they think something is wrong

I eat beef ribs with a knife and fork. Them shyts too damn expensive to eat like pork ribs.

I take my time and savor beef ribs.

I always gain 10 lbs when I go back home.

Texas alone has 4 diff styles of BBQ
  • Central Texas (what people think of these days - ideally no sauce, all smoke (post Oak))
  • East Texas (sweet sauce and beef links)
  • South Texas (Barbacoa)
  • West Texas (Mesquite has a way diff flavor than Hickory)
But as good as Texas is

Louisiana is on a whole other level of food. New Orleans, Lafayette, Baton Rouge...

But don't sleep on AL/MS/GA and the rest.

As long as you get someone to steer you right, you'll never have a bad meal in The South.

There's a reason that the South is as heavy as it is.
Facts.

We have to stay working out in the South or we would all weigh 400 lbs.

Central Texas has a lot of German and Czech influence plus Black folks while East Texas is very much "Black/Southern BBQ."

The Central style is good with brisket but I think the East Texas style has better sides, sauce, chopped beef, hot links etc. It's more well-rounded IMO, but doesn't get the shine......because most folks coming from NYC, LA, Chicago etc, would go to Austin instead of Tyler, Marshall, Waskom, Beaumont etc. They get indoctrinated into thinking the white/Central TX style is the only representation when the Black/East TX style is older and (IMO) a better representation of good que.

Louisiana and Texas got the best food

We were talking about going to Lafayette. I told him I don’t wanna go to no plantation with no white ppl telling me shyt about how it’s a nice venue. It’s black folk telling the realness or nothing.

I honestly don't know what else you would do in Lafayette other than eat. I'm definitely not telling you to do anything "historical" lol.

Yeah, coming up in the H, I always thought that there was Black ppl BBQ and White ppl BBQ. I didn't really frame it as such, but I wasn't the biggest fan of BBQ then.

Were it not for all the tech stuff popping off in Austin (really blogs and then social media, cause Austin been had IBM/AMD/Intel/Apple/Dell), I very much doubt Aaron Franklin would have blown up the Central Texas style. Now its called "craft" BBQ, and the internet has done its thing and folks have 100x'd something that used to be cheap and affordable.

Cause folks in Austin really wasn't driving to Lockhart like that in the 90s/00s. You might stop off and grab something, but you wasn't making a pilgrimage to no damn restaurant.

WAIT 4 HOURS? FOR SOME BBQ? WHO SMOKING IT, JESUS?
