Maybe the gravy is the real star
In the UK a lot of the time they use instant powdered gravy. I would say tho in the pic it looked like dripping gravy

I think I misunderstood your question cos you said “pit”. There are bbq restaurants here but mostly run by white hipster types. I had a smoked crispy kale salad at one which was actually quite nice. Not what I would expect from a bbq restaurant in the south.

My first go a at bbq was in Hawaii. In Waikiki there’s a night market on a Saturday. It was run by a Family from the south. They had these huge bbq drums at the back belching smoke. I was so excited and greed took over my good sense.

We queued up and Grandma was taking the orders and writing up the tickets, sis was at the window passing them through, bro was in the back chopping up the ribs. I was so excited to come across this family run operation. I ordered the collard greens, mac and cheese and potato salad with the smoked bbq ribs. I was practically drooling; smokey bbq charred flavours clung to the air, the atmosphere was alive with reggae music and sounds hawkers selling their wares.

I looked round the corner to what appeared to be the kitchen area and Uncs was in the back stacking the smoker with pre smoked frozen racks of ribs. My heart sunk. It could still be good; pre smoked at home. Then maybe smoked hot and fast to reheat at the market. They called our number and I eagerly went to collect my plate.

We sat under the king Kamehameha statue, the sound of the waves lapping at the shore, sounds of the Waikiki bubbling with life behind us. I open my take out box and gingerly picked up my rib and brought it up to my lips, fangs at the ready, saliva glands pumped and ready for action.

It was the driest thing I’ve ever eaten. It was like chewing on smoked cotton. The collard greens were really mushy but I could taste the flavour, it had a slight tang to it. The mac and cheese was not maccing.

TL;DR
Had southern bbq for the first time in Hawaii it and it was ass.

Also for Texas/Louisiana...

Vietnamese - Louisiana is supposed to have some bomb azz Viet food, especially south.

Authentic Chinese - Houston

Korean - Dallas

Indian - I think Dallas is a little better but that's very much YMMV. Trial and error to find the flavor profile you like.

Authentic Mexican (not TexMex) - any of the big cities. You'll know because no one speaks English, they serve menudo on weekends and the salsa is thin and hot as fukk. Also serve good aguas frescas (horchata, Jamaica etc). Rayo's Taqueria ftw.

Yelp is pretty accurate in DFW. If it's 4-stars and up with at least 50+ reviews, it's almost always at least "good". Less reviews or less stars = roll of the dice
Texas might really be the champion for widest variety of food in the United States

Full Moon BBQ if you're ever in Alabama. ( wings are magnificent)
We know Dreamland gets a lot of hype, but there's better.

If they offer white sauce ( an Alabama thing) it goes on the chicken.

I personally think Texas has the best BBQ. Admittedly I haven't had KC style, except for using their sauce.

Texas, Memphis/Nashville, New Oleans, Georgia, and both Carolinas were my favorite for BBQ.

You can skip Alabama, Mississippi, and pretty much anybody else.

I knew they wouldnt like the cornbread. I only eat cornbread the "black people" way, if its made with sugar.
