Also we have to account for the fact that this fight would be AFTER canelo vs. GGG. I have canelo losing that fight but even if he wins I think part of him will be beat out

why do boxers always want to fight retired fighters?

Because a name is a name. Mayweather beat a 35+ De La Hoya but he was still De La Hoya. Canelo beating Mayweather puts him in GOAT conversations. But I don't see it. If Shane Mosley and Maidana couldn't do it, nobody can, they hit him square with everything they had and he still undefeated.
