accountant. You will always need one for a large business. The cost of replacing one and training to understand your particular system and how you do your books can usually take weeks to months depending on how customized your business model is.

Usually make it easier to just go by a seniority system where whoever is next in line takes over the position. IE his assistant controller becomes the next controller etc. Due to that, there usually isn't alot of turnover due to getting fired, people either stay for the longterm or leave on their own for a better opportunity.

In fact that what i usually instead of firing among accountants. They don't fire you, they just reduce your pay and keep you around until you no longer feel like it's worth it.

software engineering. once you have experience, you'll be in high demand for the forseeable future. can earn well over 6 figures right out of college in big companies.

Isn't the market saturated though. I also feel it's regional, some areas (countries/cities) have less demand than others

I know a few people with majors in software engineering who are struggling to secure permanent position, they get a 6 months contract every now and then

and go stretches without work

it definitely varies by city market. entry level is saturated to some degree, but get an internship under your belt and practice for interviews and you're good. there is undoubtedly a high demand once you get experience to the point recruiters will spam your inbox with high paying jobs.
