Better question would be if animals can distinguish between race.

Can dogs distinguish between a black owner and a white owner?

There not called races; there called subspecies. In biology the way you classify the same animal; but located in a different region, is called scientific classification. For example the Tiger:

Kingdom: Animalia
Phylum: Chordata
Subphylum: Vertebrata
Class: Mammalia
Order: Carnivora
Family: Felidae
Genus: Panthera
Species: P. tigris

Then the Indochinese Tiger:

Kingdom: Animalia
Phylum: Chordata
Class: Mammalia
Order: Carnivora
Family: Felidae
Genus: Panthera
Species: P. tigris
Subspecies: P. tigris corbetti

Then the Malayan Tiger:

Kingdom: Animalia
Phylum: Chordata
Class: Mammalia
Order: Carnivora
Family: Felidae
Genus: Panthera
Species: P. tigris
Subspecies: P. t. jacksoni

The question your asking is based on geographical location and that is determined by the Subspecies. The subspecies will tell you the location in which you can find these different types of tigers. Like how your asking about chimps of different regions; you have to look at the subspecies.

I have a degree in biology

So if you was to do that with a Mexican and a Chinaman, they would be different?

No; because research shows that human beings or homo sapiens started in Africa and branch outward to other continents. Through evolution and mutation; other subspecies were created.

So all living human beings have the same species and subspecies. The different classification of subspecies represent the parts of evolution human beings went through for example: The first human is found in africa is the

Homo sapiens (Africa)

Kingdom: Animalia
Phylum: Chordata
Class: Mammalia
Order: Primates
Suborder: Haplorhini
Family: Hominidae
Genus: Homo
Species: H. sapiens

Right now in the present day from evolution; the modern human beings are considered Homo sapiens sapiens

Kingdom: Animalia
Phylum: Chordata
Class: Mammalia
Order: Primates
Suborder: Haplorhini
Family: Hominidae
Genus: Homo
Species: H. sapiens
Subspecies: H. s. sapiens

So; what your asking about the different classification between Mexicans, Chinese, Black and etc; there is no difference because were all the same species and subspecies. The classification your asking is based on race which was started in 17th century which is a social concept based on a group of people with similar characteristics. Before people were grouped together because they spoke the same language.

But in the 17th century the classification changed and it included your physical (phenotypical) traits; example: black, white, asian and etc. Remember slavery started in 1619.
