Charcoal.

The flavor that it adds to the food is unmatched.

Plus the experience is more…primal? Having to work with the charcoal, heating it up, getting them just right is a more rewarding experience than turning a knob.

Also, the smoke/smell brings back great memories of barbecues I’ve had as a wee lad.

I have 5 grills plus a blackstone. I use both. I can put the aspargus, corn, hot dogs and hamburgers on the propane grill. Then i put the steak, brisket, lobster and chicken (the more expensive shyt) on the charcoal. I cook em all at the same time so i dont have to be out there all day. Chicken takes the longest so you gotta smoke em till they are yellow, Burgers and dogs are expendable, plus they dont need to be gourmet for kids to enjoy them.
