I'm trynna figure out what to eat to lose 60lbs (presently 240lbs, 6'1, 35yrs old,35% bodyfat) recovering from an long term injury which kept me away from the gym for about 12 months.

Myfitnesspal says i;m not eating enough (i've never tracked things on this level) and I'm struggling to eat more (aiming to lose it in 6 months as i'm in the gym daily).

Breakfast 3 egg whites poached, broccoli 2 cups, fetta, 1/2 an avocado
Lunch: 150 gram chicken breast grilled, cauliflower 2 cups
Dinner: Salmon + 2 cups broccoli
3L/100Oz water daily (filtered water)

I used an online macro calculator and it said to eat 2600 calories ? In the below quantities
Carbohydrate 266g/ 40.6%
Protein 225g / 34.4%
Fat 73g / 25.0%

And i'm in the gym 6 days a week using a program from bodybuilding.com

I use MyFitnessPal and I find it helpful.

Right now I'm in a cutting phase, so MyFitnessPal recommends me eat about 2000 calories a day (I burn about 2500 calories) which seems accurate. So I need to be at a daily calorie deficit of 500 calories x 7 days a week = 3500 calories to lose one pound of fat. For me it's been pretty accurate. You can go to a lot of websites to get an estimate of how many calories your body burns a day: Here is a good place: How Many Calories Do You Burn Every Day? Find Out.

From my understanding you can probably go as high as a 1000 calorie a day deficit and that would allow you to lose about two pounds of fat a week. But anymore than that and you would be burning muscle.
