ketchup consist mostly of vinegar. I don't keep vinegar in the fridge, and I don't keep ketchup in the fridge. furthermore, I don't even like ketchup, so the only reason I have it in the crib is for guests or my kids when they here.

I keep unopen bottles in the pantry. Opened ones in the fridge.

But i usually take it out and let come to room temp before each use. I don't like cold ketchup on my food.

something about having opened containers of food sitting in your pantry full time feels unsanitary to me. i don't want to give anything in there the opportunity to spoil. Pantry is intended for long term storage to me. I only want to worry about stuff in the fridge going bad because its airtight and contained.

as an RN myself, i like it room temp so i keep it in the pantry. Plus ketchup goes fast in my household due to kids.

Plus sometimes cold ketchup is a good compliment if whatever you're putting it on is hot.

Nothing is growing in ketchup. Not enough to make you sick anyway. It’s already very acidic so refrigeration isn’t for food safety but more keeping the quality of the ketchup high. But it’s shelf life is super long regardless
