Seasoned salt, creole seasoning, onion powder, paprika, a pinch of garlic powder and pepper. And a little bit of regular salt for the flour.

Only 10 am and you guys are making my mouth water with some of these recipes. Good to see ya'll doing some cooking.

Green seasoning is just a mix of herbs, garlic and onions, peppers if you like those to.

It's usually made with shado beni (culantro) but if you don't have a international grocery near by you can use cilantro.

I use parsley, thyme, Spanish thyme, celery, cilantro and chives.

Optional: peppers, (red, green, pimento, habenero or scotch bonnet
Pumpkin is good but I haven't tried it yet.

You can throw them all into a blender or food processor.

My dad usually buys a big thing of chicken legs and thighs. Cleans and skins them all on one day. Then, puts them in ziplock bags with green seasoning and throws them in the freezer until its time to cook. It saves a lot of time.

You can also put your green seasoning in ice cube trays, freeze em then put the cubes in a zip lock bag and put it back in the freezer so you have quick ready to use portions.

I sauteed onions and garlic in olive oil, then added the seasoned chicken thighs. Browned them on both sides then added crushed tomatoes and wine to make a sauce. I served it with spinach polenta.

Homemade caribbean green seasoning

Pretty much - Onion,Spring onion or scallion Garlic, Salt, Ground black pepper, Curry powder if you doing curry chicken - Brown sugar if you doing brown stew chicken.

Red and green peppers,scotch bonnet, pimento

Can add a bit of ketchup to the mixture if you want as well.

Lemon juice or vinegar to wash it and your good to go.

If grilling / smoking...

Wet brine for 48 hours. Pat dry, cut up some thyme, sage, rosemary. Mix in olive oil. Cover chicken. Sprinkle salt, pepper, paprika, cayenne over the chicken. Put on grill. Feast.

1. Clean the Chicken in cold water (clean off all that shyt they've been sitting in-in the packaging)
2. Dry them off as much as possible with paper-towels (the more moisture you soak up after step 1, the less popping in the grease will occur)
3. Salt, Pepper, and then any other seasoning you'd like to flavor your chicken with
4. Put 3-4 pieces at a time (depending on size) in a big ziplock bag with flower, shake until fully coated
5. put em in the grease and enjoy deliciousness
