How do yall season chicken?

i usually marinate all my chicken that i cook. anything acidic (lemon, lime, orange, etc.) and then add additional things depending on what type of dish i'm cooking and style. i buy the meat i'm eating for the week, marinate it, refrigerate and cook it over the course of a few days...

I season based on the whole meal and what flavors I am trying to get. Last time I made chicken thighs it was really simple. I used garlic powder, onion powder, paprika, thyme, salt and pepper. I sauteed onions and garlic in olive oil, then added the seasoned chicken thighs. Browned them on both sides then added crushed tomatoes and wine to make a sauce. I served it with spinach polenta.

If you aren't seasoning under your chicken skin them you obviously aren't living right.
nah not necessarily. you season under the skin who you purposely trying to give it a strong flavor. but if you know how to season your food correctly, it will be strong throughout the dish.

Theres also some mixed peppercorns I use from time to time, that you rub onto it.

Recentley I got some garlic salt from the latin aisle and paired it with hot chili powder, made for some delicious chicken

If always put a herb bouquet and a bit of butter under the skin if I do leg quarters and chicken breasts (especially whole roasted chicken)
