Medium well to medium rare.

Certain types of steaks require that IMO..I hate dried out steaks that are just hell to cut through with a knife.

I used to be all about well done steaks back in the day as well.

Well-Done Steak: Just Say No!

What about food safety? Isn't that a good reason to cook steaks all the way through? Actually, dangerous bacteria like E. coli don't live on the inside of a steak. They might live on the surface of a steak, but cooking the outside of the steak will kill them. Burgers are another story. To be safe, ground meats should be cooked well-done. But medium-rare or even rare steaks don't present any particular food safety hazard.

Temperature (meat) - Wikipedia, the free encyclopedia

As meat is cooked, it turns from red to pink to gray to brown to black (if burnt), and the amount of red liquid, myoglobin (not blood), and other juices decreases. The color change is due to changes in the oxidation of the iron atom of the heme group in the myoglobin protein: raw meat is red due to myoglobin protein in the muscles, not hemoglobin from blood (which also contains a heme group, hence the color). Prior to cooking, the iron atom is in a +2 oxidation state, and bound to a dioxygen molecule (O2), with a red color. As cooking proceeds, it loses an electron, moving to a +3 oxidation state, and coordinating with a water molecule (H2O), turning brown in the process.

fukk a over-priced restaurant steak. But then I rarely choose to eat out, especially something I can make so much better. I cook my New York Strips between med. and medium-well :eat:

Medium.

What cuts do ya'll prefer?

I love T-Bone cuts. You get a strip and fillet plus the flavor from the bone. :banderas:
