This thread really takes me back to my childhood. I ate chitlins for about three years as a child; however, when I was about 9/10, I helped my mom clean them and just never had an appetite for them again. I wasn't grossed out cleaning them because most come pre-cleaned (you just need to go in more yourself)...I just never wanted them again.
Also if you google most of the foods mentioned, you see that these same food are prevalent in Latin American, Caribbean, and "ethnic" cultures too. Some of these food are not just about being "ignorant southerners." These foods are apart of a lot of cultures and cuisines across the globe (and sometimes delicacies on the Food Network).
