Setting up your own launcher, choosing your own default apps, customizing anything you like when it comes to your phone's interface. beyond that rooting your phone and installing whatever rom you like. on my iPad all the web browsers are Safari with a skin over it on my S5 i can actually have different web browsers. I can install and run flash if I want on Firefox beta or Dolphin HD.

I'd say choosing what software your phone uses is more than how it looks. Imagine if with Windows you could only use Internet Explorer with no option to install Chrome of Firefox. That would be embarassing but on a cell phone which is basically a computer you get people defending crap like that because they bought into that eco system. If you like a company dictation what software you can install and run by default and even what you can't like that then good for you but some people would like to be able to choose what and how their phone runs without having to wait a year + for hackers to open it up.
