Northern states had diversity through travel between diverse neighboring states. Migration from the south but not as much in reverse.
Outside of Mexican food in Texas, the South is pretty homogenous. The Caribbean influence is the only outlier in New Orleans. So you get variations on the same meals but it’s still the same meals.
