Making Gumbo for the first time today although I’ve never tasted it. Any tips?

So here’s the finished product, I also made a mango and dragon fruit smoothie and some corn bread. He liked it said it was pretty good. Hopefully we can go to Louisiana so I can try the authentic version.
So funny this came up in my mentions. So I read back through the comments. As some of you may know we went to Louisiana last year and I had loads of different gumbo, I realised it more like a soup than a stew, kind of like a rice soup. I had so much gumbo it was coming out of my ears, I noticed they also served it with crackers, but no potato salad. I did enjoy it at every opportunity and mine didn't taste that different. I have only made it one other time since then where I used some smoked duck legs which I smoked myself. The one I made had a little more body than some of the ones I had while I was in Lousiana but I think thats more due to the quantity, I was making a family sized portion vs what I presume are large Vats for commercial production. It is definitely a favourite of mine now though. Next up I gotta learn how to make crab cakes, and etouffe. I also gotta learn how to make hot water cornbread because it is one of his favourites. I have made one of his other favourites for him though which is shrimp and grits, when I had it in Lousiana they deep fried the cheese grits after shaping them into balls too which was a favourite of ours so I guess I'll be doing it like that going forward.

I made gumbo for the first time last night too lol. I didn't follow directions clearly so my roux didn't darken, it was more of a peanut butter brown, and I used white rice flour because my mom can't have gluten.

Turned out pretty good but I wanted it darker.
I've made it twice in my life. First time didn't let the roux get dark enough but it was fire. My ex and daughter were living with me at the time and they were leery about trying it. After the first small bowl they went back three different times each tearing it up. I went all out for it. Made it with crab legs, tilapia, crab lump meat and shrimp. Might've had scallops too. Only thing I'd change is that I didn't make the roux dark enough.

I forgot to take note of the recipe so tried a different one the second time. He had stewed tomatoes and something else with it that threw off the whole taste. It was ok but nowhere near as good as the first itme.

Honestly even if you go to New Orleans so many people make it so many different ways. I always like gumbo but what made me love it was eating a local's gumbo. I was pissed because I was wanting to do a food tour of NO. One of my travel partners knew a local couple who we went to hang out with. They had made gumbo and was offering it. I was being a pissy little bytch and turned it down until I got too hungry and tried some. That may be the best damn meal I ever had. A white couple at that.

Not having gumbo as an adult is interesting.

Even my family, who's been based in LA for a minute has it every new year.

You know the internet reaches outside of America right; which would mean that there are ppl from other cultures and countries that would be able to use it. I currently have two hamsters on a wheel running mine.
