1. Why are you partial to canon?
2. I need a shorter focal length for travel, and other things. 70-180 isn’t going suit certain situations.
Thinking about the 18-35 for versatility. You think that’s a good choice
My first real camera was a canon t5i then I bought a 6d and those held me down for years. Shot my first wedding on a 6d , first time I went to NYC and did some shots was on a t5i with a 24-105mm ever since then I've always stuck with canon. All my first party lenses are canon so when i was upgrading my gear I just stuck with canon again. Only negative to me about canon is they haven't fully opened up the r mount to 3rd party lenses. But honestly all modern day cameras from canon, sony, panasonic, nikon etc. you can't go wrong with any it's all about preference.
For travel I just use a 16mm but I travel light but I mainly do architecture. If you have the space Tamron 28-200 will cover everything you need. If not can't go wrong with the 18-35 or the 16-35. So yeah good choice compact and covers mostly.
When I was in your city NYC I just brought my 16mm, you get so much with a wide angle lens. You never have to "step back"
