Lemme enlighten some of you brehs on basic PB&J skills. I'm currently broke so I went back to basics.
First off, toast your bread if time permits for the optimal spreading surface. Make sure you have quality bread that doesnt pull apart or isnt crumbly. I use whole wheat.
Most importantly, and I cant stress this enough, peanut butter first and always. Spread it on one slice than wipe the knife clean on the other slice. You can then proceed to jelly (or preserves if you fancy like me) on the other.
Nothing worst than jelly in my peanut butter jar or vice versa. Cross-contamination
And people who spread jelly on top of the peanut butter are just heathens. 
Now if you want some high end pb&j's, add honey and/or fruit slices.
Fruit free: just peanut butter and honey
Peanut butter and banana
Strawberry banana remix: Peanut butter, strawberry preserves and banana slices.
Strawberry kiwi: same as above just with kiwi.
Banana berry
Get creative. Plus, they have almond butter, cookie butter, apple butter, marmalades. Try some preserves from your local food market or try canning yourself.
