Because it wasn’t nor ever was the music that invited evil. Music is just a tool for a form of expression. Sammie understood the inherent hypocrisy of his father’s preachings when he himself recited the Lord’s Prayer and it did nothing to ward off Remmick. Remmick wanted to use Sammie’s gift for “evil” while his father wanted to use it for “good” and in the end they were both full of shyt. Music is neither good nor evil, its the intent of the PERSON that really matters.

So in the end Sammie kept the Guitar because he understood that he himself was the one who carried the capacity for whether he indulged in good or bad. He’d been doing so all day. Lying to his father, lusting after and copulating with a married woman (bad), but also trying to protect his cousins and Pearline when the shyt hit the fan. (Good).

The point isnt that him singing invites evil, it's that it transcends a period of time and unites the entire legacy of our ancenstors and future descendents. But because it's so soulfully transcendent, evil will also be drawn to it. But the gift itself is not evil, our culture is not evil, even if vultures circle around wanting to get a piece of it.

I think his decision to keep singing the blues specifically relates to the final post credit scene, where he sings this little light of mine. That light can draw attention from any number of characters and forces and spirits. But he's going to shine it no matter what.
