I'm not deep in the lore but my take is:-Low number of Sith and they made it so they were either dolo or duo in fights (Rule of two).
Sith are all about that power and cull out weak acolytes
-Jedi take in everybody force sensitive but have to tiptoe on how they use the force or risk falling to the dark side. So they have more trash in their ranks and it takes years for them to 1v1 a Sith lord.
