So why can't we kill kids in video games?

Yes add children to games like Fallout 3/New Vegas/Skyrim where I'm either toting a portable nuke launcher that can destroy any carbon based life on planet earth or wielding a spell that would fukk Akeelah's shyt up aimed at a child in said games and they will never die.

Why's it perfectly fine to have anything done to an adult human but not a child human?

IIRC in first two fallout games you can even get rep of 'child killer'

its not like it didnt happen before. everyone is just PC these days. bioware even has all kinds of LGBT relations to cover all bases in their last few games
