I thought the same shyt when I first tried softshell crab, but it's called soft shell for a reason. The whole thing is edible the way its pictured, the one I tried was amazing

Soft shell is when they molt (sp) they are vulnerable until it hardens, so they batter and fry it, and it’s good af

Is the shell still there but soft enough to chew through
basically. Its kinda like if you eat a polish or hot dog that has a little crunch when you bite it, but its a really light shell. Dont really know how else to describe it. First time I had one I wasn’t expecting any shell, just thought it was like crab with no shell or just soft skin like fish and I took one bite and was disgusted. Second time I knew what to expect and it was good.

I make these all the time, fling em on a seafood platter or in a brioche burger bun with coleslaw. I make a Japanese-esque dipping sauce and ppl eat it up. I was eating so much at one point I went off it.
