if you give me a recipe, i can follow it to a tee. My issue with cooking is that i dont know how to wing it or improvise. im lost if i dont have a recipe to follow. What's the key to improvising when you are missing certain ingredients. What ingredients should you always keep in your kitchen no matter what? i know the obvious salt, pepper, sugar, butter, oil. What else?

Buy a book called the new best recipe. Obviously it has recipe's in it, but it also discusses how they came to the conclusion of why the chose the ingredients they chose. I reference it on a regular basis.

Wash and clean the chicken
season it; I prefer to season the chicken overnight
some people boil the chicken before frying
rub the chicken in seasoned flour (salt, pepper oregano)
deep fry it


I have never cooked fried chicken before :yeshrug:

so why you giving out advice :what:

I don't fry chicken often but this thread is making me want to again soon :patrice:

I brine then marinade, Brine with just salt water. marinade with low salt and butter milk with whatever other flavors you want. You could also add corn starch or baking power to the flour makes it lighter.

coat in flour, re-dip in marinade then coat again.

Dark meat in the center white meat on the ends. Make sure you oil isn't too hot or it will cook the outside too fast and leave it under cooked inside. should be golden brown on each side. Since if would be your first time I would do a test piece to time it and you can check it to get exact minutes. Also remember when you add cool things to oil it makes the temp go down. So remember to let your oil heat back up if you are doing them in batches or after your test piece.
