It's a hassle, but you could always switch things around in the loadout menu between deaths pressing Square/X. The game at least saves how you had your attachments on other guns. I think EA/Dice want people using the Battlelog app to switch things on the fly.

Oh I'm playing on PC and I remember BF3 had that little submenu when you highlighted a weapon under the class where you could switch them. I don't know how to do that on PC.

Edit: you don't have to leave the match to open battlepacks you can do it from the options button during a match. It's also under my soldier in the home menu screen.
