10s is as low as you should go for bag/, pad work...that's only if you are focusing more on speed or you're blessed with fast hands..you can spar with 10s..I personally have never..you need that padding lol. You should never spar with no 8s...do that and you might as well sign up for a pro fight lol..that's dangerous as hell

Sparring and bag work

Nobody is going to spar with you wearing anything less than 16 oz, neither should you tbh.

Get a few sizes if you can, good to do rounds on bag or mitts with different sizes.
