I used to think this too, but some of the actors in Asia that do fight scenes arent formally trained either. American directors and editors just suck at doing fight scenes for the most part.
It's been this way for a long time. Fight scenes are terrible in movies now, although there's a few here and there that stick with the action and don't cut it all up.
Noticing excessive cuts is like a deathnell. You will suddenly enjoy less action films/tv on average once its brought to your attention because its RARELY done well.
It's like how I used to think regular TV shows had great writing until I saw The Wire.... Then all of a sudden you realize that the rest of the stuff is just half assing it and you can barely enjoy them anymore
