I normally do ribs but instead I'm going to try smoking a brisket for the first time. Snake method in the 22' Weber. I was going to do that and then maybe a whole white fish as well for a little surf and turf type action (and as a contingency plan if I fukk up the brisket). I can't go back to filets ever since I've started grilling fish whole. Might get some links on there too and some corn.

Who else throwing down on the grill this weekend?

Smoked a pork shoulder last night. Waiting out the stall right now. Snake method on the Weber Smokey Mountain.

Does snake method work good on the smokey mountain? I have one but have never thought to do the snake method. I usually just load up the charcoal.

I have an offset a friend built me. I use peach or hickory when I use it but its definitely more difficult to manage temps but food comes out better.
