but mayo adds more fat than what is necessary on a burger

burgers need the acidity to balance the fat in the beef

adding mayo to stuff like a fish sandwich or chicken makes more sense cause those are less fatty meats

but the combination mayos available kinda throw the logic around depending on what theyve mixed

Depending on the grade of Mayo, it works well as a substitute for general sauce it if has enough tartness and sharpness to it.
The Hellmanns' variety is bland, and about as palatable as drywall paste.
