We weren’t really big rice eaters to begin with. Only have rice if I’m eating ethnic food but I don’t cook it at home.

Yeah, I would say that there are a few exceptions. My initial thoughts were creole/cajun cuisine and, as you said, the cuisine of the Carolinas. But are you saying rice was a staple at every meal like it is in Asian, West African, and Latin AmerIcan food? I feel like the potato was more of the staple for the average American.

If I had to choose between potatoes or rice, I’m going with potatoes.
