I don't eat red meat that often, but when I do I usually go for medium myself. Although when I was younger and didn't know better I went for well-done.
That said I don't think black folks "love" well-done steak, we're just more concerned about potential food poisoning.

Burgers have to be well done and they can still be juicy if it has a good fat ratio. A lot of burger places use sirloin which is why the shyt be dry. The best burgers are 70/30 lean fat ratio.
