You can't see as well as you would think in a plane, especially in a turn. The bomber was probably in his blind spot until he hit him.

The wings are attached to the most structurally sound part of the fuselage of aircraft because they're FAR more subject to stresses trying to rip them off. The rest of the aircraft is basically a hollow shell encased in aluminum. The wings didn't 'fall off' so much as the rest of the plane disintegrated on impact.
