They go for that area because they are trying to paralyze the prey so it doesn’t flail around and injure them. Jaguars rarely attack straight on, they always try to attack from
behind. It’s the entire basis around the concept of projectile weapons which humans developed thousands of years ago. They want to kill prey with minimal risk of injury to themselves.
