Yes and no.
It's just bad business moves and bad business management. Them Chinese folk are too cheap and untrusting to hire outside people to do their job so they don't have to work 12 hours a day 7 days a week.
Plus with the money they make and so-called save why don't they open up more restaurant chains and/or invest? Betting on your kid to become a doctor, engineer and successful to take care of the family is unfair and not fullproof. Their kids could be like nah fukk it. "I've worked my ass off my whole life for this family, I'm gonna do what I want now. I don't wanna be a doctor, lawyer or engineer".
And how can they come from severe circumstances to owning a restaurant chain? It's possible but I doubt all them Chinese chain owners saved pennies and pennies to build that business.
The people working 12 hours and 7 days a week have no other skills. That cheapness allows them to save money in labour costs and high attrition.
Unfair is a western gripe. They don't care about fairness. They care about the family and sacrifice not personal individualism/gratification.
Read some Confucius and it will all become clear to you.
As for how they do it, if you work from 1968 to 1990 with no vacations and cheap out on everything. You can raise 500-1million and buy the building/restaurant.
