Even so, based off of the article, it doesn't appear that black slaves had anything to do with the sandwich which originally comprised of french bread and boiled or fried oysters.

The pulled pork/brisket situation is still murky.
BBQ itself is an influence of african, spanish (barbacoa) and native influences.

Never heard of tripe sandwiches. I've heard of sandwiches made of pig ears, pig nose and the like but not of tripe. Where is this popular?

To be honest I've only really seen it in my hometown of St. Louis. Just googled it and the only places that pop up are St. Louis and Florence Italy lol. I was always told by my OG's that Tripe is pig p*ssy lining lol. But apparently it's actually fried cow stomach lining lol. Sounds fukking horrible but believe me its fukking delicious!
