dont open the actual restaurant, what you should do is have something like an ice cream truck set up. It will lower your cost tremendously. Then when you got enough bread and clientele move on up to the restaurant

Did you not read my initial post? I know EXACTLY what kind of food/drink relates to that specific area I have in mind.
How do you plan to set up shop and not know basic things like what kind of food/drink correlates to what area you want to market to.

Anyone here been through it? What are the ups and downs? I know all Restaurants are different depending upon the Demographics. I'm thinking about opening something small (healthy food, juices, and shakes.) Only having 5-6 tables to keep the rent relatively low, mainly concentrating on to go orders.
