For actual seasonings, I use the basics: garlic powder, union powder, adobo, and some kind of seasoning salt (that doesn't have salt in it)
Green seasoning is just a mix of herbs, garlic and onions, peppers if you like those to.
It's usually made with shado beni (culantro) but if you don't have a international grocery near by you can use cilantro.
I use parsley, thyme, Spanish thyme, celery, cilantro and chives.
Optional: peppers, (red, green, pimento, habenero or scotch bonnet
Pumpkin is good but I haven't tried it yet.
You can throw them all into a blender or food processor.
My dad usually buys a big thing of chicken legs and thighs. Cleans and skins them all on one day. Then, puts them in ziplock bags with green seasoning and throws them in the freezer until its time to cook. It saves a lot of time.
You can also put your green seasoning in ice cube trays, freeze em then put the cubes in a zip lock bag and put it back in the freezer so you have quick ready to use portions.
