What was your senior project? That's always a good starting point. Honestly, if you are passionate about it (which I assume you are), there are plenty of side projects you can do that are just as impressive to employees.
For instance, making an app. It doesn't have to be anything special, just something basic. If you are familiar with CoCo you can make a music app using most of the apple app infrastructure (through basic calls). But when they see "created an app" on your resume, they will pull one of these
When I graduated I did some work reverse engineering video games (well 1 game in particular). Every job I've worked in, even network engineering jobs have always asked me about that
