I actually agree with OP, that version sucks. A well made ribeye steak is the goat. Pan seared then finished in the oven = best steak to have. Renders the fat nicely so you’re not chewing on soft fat nonsense

What does render mean?

Means the fat cooks and sizzles so it becomes more crispy. Like on bacon.

I love it...if you don't care for rare or medium rare it's not for you. Anything above that for prime rib is trash
