What does render mean?
I always hear that term mentioned with fat meat.

I like my steak to have a little fat on it because when you cook it, that fat adds flavor. Some ppl eat the fat, some dont, but I do most times. Gotta be careful. That shyt is a choke hazard for real

This looks delicious! I would probably leave it in for a hair longer. Maybe pull it out at 125, but this is a beautiful cut of meat cooked more or less the way you should cook this piece. For those saying they prefer rib eye; this is the piece it’s cut from. Those are all rib eye steaks with the bone and in a large section. You just need the perfect beef gravy to go with that and some crisp steamed carrots.
