There's no reason for there to be an enterprise where people generate billions off of what they physically do, and reason little to no compensation. None.
You speaking about what universities generate outside of sports means nothing because students can get paid off of their likeness whenever they want. Athletes can't. A student can write a paper or discover something intellectually, and if someone wants to pay them for their autograph it's okay. Athletes can't. If a student wanted to work full-time while at school for their future job, they could. An athlete can't just play and keep their collegiate status and many coaches bar athletes from even holding jobs.
So stop comparing the two because they are NOT the same.

I also think the whole "getting paid off your likeness" argument is more tricky. If a regular student ends up in a brochure advertising the school, do they get compensation for that too? Its not that easy to clarify. Personally i edge towards compensation but I'm not so sure its a good idea. Do only big schools get them?
These arguments are often held among those who are failed athletes themselves (tried to go pro) and want to wish they could have been compensated for not making better use of their time.
You may feel cheated but in no way does the degree you should have prepared for need to be cheapened with your inability to structure your time and weigh your priorities. Some go to school to get an education and others go to get a degree. You chose to do the former. Don't be selfish because you didn't embrace the latter.

A degree isn't a guarantee of success, but its a pretty strong indicator of being capable of reaching some additional goals, so if you chose to squander that, tough fukkign break.
I've never heard more athletes complain than those in basketball or football. Even the baseball ones tend to do alright. I never hear a word from the swimmers, track and field players, or any of the other ones who go unnamed but work JUST as hard.
I have friends and associates who played D1-D3 sports and a great many of them TOOK that free education and did very well for themselves afterwards.

This is another flawed argumentIf you want to call them student athletes who are amateurs, then stop marketing them to corporations and general population in a way that creates demand for them.
