Once you get used to the gameplay loop you'll start to find it's not that as hard as you initially thought.
Approach it like you would a game from nes/snes times. If you die you die, you gotta remember why and where the enemy killed you and use that knowledge to get past him next time.
It's like getting 6 levels into sonic then getting game over, you gotta use the knowledge and experience you gained to get further the next time, that's the hook. If that's frustrating to you it may not be the type of game you'll enjoy.
However learning a level in these souls style games beating the boss and gaining skills to where enemies and bosses you thought were hard before are now easy to you is one of the most satisfying feelings in gaming.
