Goku didn't go SSJ3 just to give Vegeta's frail ego ass a chance. Then he sneaks him after the fight. It was an unsightly act for a so called warrior with pride.

Plus Vegeta didnt sneak him to win the fight, he just needed to get him out the way so he could fight Buu alone and even said, "We'll resume this later."
