I haven't had milk since I'm not lactose intolerant I can eat cheese, ice cream and other dairy with no issues

Reason why milk is shelf stable over there is because it's "cooked" longer. Milk is heated to remove bacteria(pasteurization) the longer you heat the milk the more safe and stable it is but the less like milk it taste.
