It's all in the prep. I like soul food, and it don't gotta be over salted but I think it get a bad rep 'cause of the prep.
Soul food ain't been elevated to the level of other cuisines and it's still a folk typa thing.
When it's good it's top tier, when it's bad it make you stay away for a minute.
Nobody thinks of Creole as soul food outside of Louisiana.
Crayfish and shrimp is not soul food. Go to any soul food restaurant and they handing you a plate of yams, greens, Mac n cheese, cornbread, and fried chicken.

In all fairness, we just figured out that we were an ethnic group worth protecting and defending. I expect things to be different moving forward.So why ain't we united to fix our problems with under-capitalization? Why we not linkin'? Why we in a thread tryna exclude subgroups of soul food? Yep! When you cook them use green bell pepper and celery. You gon have to omit the onion due to ya hubby allergies. But these cook thicker than Black eyed and the tastes is off the chain. And it pairs so fukking well with Fried Catfish. Plus you can eat them with rice or with out.I'm growing these. Is that right?
