You're confusing sex with gender. One is biological. One is cultural. There is nothing scientific about gender.

David Peter Reimer (August 22, 1965 – May 4, 2004) was a Canadian man born biologically male but reassigned as a girl and raised female following medical advice and intervention after his penis was accidentally destroyed during a botched circumcision in infancy.[1]

These socially constructed roles vary depending on the given society, and can be changed. Some people identify with the gender they are assigned at birth (cis). Some do not (trans). Logically, you're right. But again, what does race have to do with gender? They're two totally different categories that don't function the same at all in society historically, or currently. When black women talk about intersectionality they are taking about the overlapping of both race AND gender.
