The CAC that owns the joint admits out of his own mouth that overcooked ribs is his preference....![]()
Pork ribs like these spare ribs I like to have a little pull, and not just come off too easily. Sone firmness, so it stays in place and doesn't all come off the bone when you bite into it. Better texture that way too. I like the leaner back ribs better tho.
But beef ribs, especially short ribs like the op, those look right!
