That shyt looks like overcooked mush. For quality barbeque the meat should have integrity so the meat comes off with a gentle tug. Any meat that falls off like that is overcooked.

To his or her own.... White people normally comment that ribs are overcooked if it's falling off the bone, but countless black people like them that way......... whatever your preference......
