You forgot about Gio Urshela and Mike Tauchman.... Unless they both go into a prolonged slump, you can't remove the from the lineup.
Cam Maybin and Mike Ford as in the deicisioning for bench roles.
We have one of those good kinds of problems, but nonetheless a problem.

If he comes back he will be in the starting lineup. Gardy will unfortunately be the 4th outfielder.

Voit would go to the bench and DJLM plays 1B. It's their best offensive/defensive infield.
Stanton would share DH/LF with Encarnacion/Gardner or Tauchmann.
C - Sanchez
1B - DJLM
2B - Gleyber
SS - Didi
3B - Gio
LF - Stanton (it is what it is....)
CF - Hicks
RF - Judge
DH - Encarnacion
Bench - Voit
Bench - Tauchmann/Gardner/Maybin (one of)
Bench - Romine
Dilemna. If you have Stanton and Encarnacion, do you really need Voit? Or, do you need a Tyler Wade (utility) in that last bench spot?

A long way to go til October, but I can see the roster being this
C - Sanchez
1B- Voit
2B Torres
SS Didi
3B DJ
LF Stanton
CF Hicks
RF Judge
DH Encarnacion
Urshela, Gardner, Romine, and then Tauchman /Maybin fight for the last spot (I'd guess Tauchman because he's a patient lefty and Gardner essentially replaces Maybin as the late inning defensive replacement /pinch runner)
and then the postseason staff is

Paxton
German
Severino
Green
Betances
Ottavino
Kahnle
Chapman
Britton
Happ
and either CC or Cortes (I'd put Cortes since they're likely gonna use an opener in the playoffs, but CC's gonna be on the roster even though he's useless at this point)
