the writer barely writes it anymore and the anime, hell the series itself, seems destined to be left unfinished like any day now dude will just retire due to health issues.
For example Naruto started a year later than HxH and went for 700 chapters. HxH is at like 349 and that's a span of 17 years. That's 884 weeks of potential chapters and a 40% ongoing vs 60% hiatus ratio (7 years of actual chapters and 10 years of nothing).
