Last night, I made fried chicken with mac n' cheese. For seasonings, I used black pepper, seasoning salt, cayenne pepper, and some parsley. For the oil, I used vegetable oil. Here's a pic below:

I wanted it to be more crispy with a better, stronger and more extravagant taste, but this will do. Any tips?

need a deeper pan homie. get one of those dutch ovens, or just a big cast iron skillet.

also, if you want that truly extravagant experience, you gotta use some form of animal fat - vegetable oil is :manny:

there's a lot of different techniques for getting the best skin; flour-egg-flour, buttermilk, shake'n'bake, etc. comes down to preference and experimenting

at the end of the day, pan frying can get hella messy so I just do my chicken in the oven and if I want fried chicken I'll get it from a restaurant that has a deep fryer (preferably a broaster, place across the street has these old, colonel sanders era broasters that are the GOAT chicken I've had)

@OP , how'd that mac'n'cheese turn out tho

I hate frying. Its my weakness in the kitchen. I never know the right temperature or for how long.

plus OP those drums are too big. Them steroids joint will cook faster outside than inside. Not enough heat reaching the middle.

and like mentioned, once you size down used panko bread crumbs and a bit more flour to get a crispier coating. Cajun seasoning is my favorite for fried chicken.
